Broccoli Ricotta Calzone

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 12 ounces broccoli florets
  • 1/4 teaspoon red pepper flakes
  • 1 (13.8 ounce) can refrigerated pizza dough
  • 1 1/4 cup Dragone® Ricotta Cheese
  • 1/2 cup Shredded Parmesan Cheese
  • 1 1/2 cup Dragone® Fresh Mozzarella Cheese, shredded
  • Salt a pepper
  • Cornmeal, for sprinkling
  • Store-bough pizza or marinara sauce

Directions

Preheat oven to 400ºF.

Heat a large skillet over medium-high heat. Add olive oil and swirl to coat. Add onion and garlic and saute until fragrant, 3 to 4 minutes. Add the broccoli florets and red pepper flakes. cook uncovered, stirring occasionally, until broccoli is tender, 5 to 7 minutes. Set aside to cool.

Combine Dragone® Ricotta Cheese, Shredded Parmesan Cheese and Dragone® Fresh Mozzarella Cheese in a bowl. Add broccoli mixture; season with salt and pepper, and mix well.

Unroll one pizza crust onto a greased baking sheet; shape into a 14-inch x 11-inch rectangle. Spread the broccoli-cheese mixture lengthwise on half of the dough to within 1-inch of the edges. Fold dough over filing; press edges firmly to seal. Repeat with remaining crust and filling ingredients.

Bake until golden brown, 15-18 minutes. Cut into slices. Serve with pizza or marinara sauce for dipping, if desired.
